We stayed around the house a lot this weekend and it was really nice! We had some good friends over for dinner, caught up on laundry (well, almost!) and got in a lot of time playing with LEGOs. We waited to try making gnocchi until Saturday, so that we could work on it together. It was SOOOO good! We’ll definitely have it again, although we might try a different sauce just for fun (we did end up making our version of the sauce suggested with the gnocchi recipe – side rant: we could not find prosciutto ANYWHERE so we had to settle for bacon. Frustrating!). It’s a fun team project, too – it’s messy, though, so be forewarned. J wanted to be “silly” and had me put some flour on his face. I wasn’t trying to be silly, but I had flour pretty much everywhere! It takes some prep time – you have to bake the potatoes first, which takes 45-60 minutes, and then you have to rice them. We don’t own a ricer, so we used a garlic press as a substitute. It took FOR.EV.ER. We will be buying a ricer before the next time we make this! Anyway, if you’re looking for a new recipe to try I’d highly recommend this. One note – we did a lot of testing to figure out exactly how long we needed to boil them. That helped us a lot. Plus, then we got to snack while we cooked.
On to the meal plan for the week – we’re actually traveling a bit this week (I’ll write about that next week) – but I’m still going to list out meal options for each day because, if you’re like me and are always looking for ideas, you’d probably appreciate a few extra options.
Monday: Burritos – leftovers, actually. This meal makes a TON – I cook up ground beef with fajita seasoning, some white rice, and black beans. When we’re done eating it for the first time, I mix all three together to store in the fridge. We’ll have quesadillas with the mixture for lunch, and then a second round of burritos for dinner. The kiddos love this too, so it’s a favorite of ours. I am sure I’ve mentioned this before. :) We like to make our homemade guacamole to go with it – sometimes we’ll save the guacamole for the leftover night, so there’s a “new” dimension to the meal.
Tuesday: Some friends of ours are moving to Florida at the end of this week :( so we’re having them over for dinner before they head out. Brian’s handling the bulk of this meal – burgers and hot dogs out on the grill. I don’t know if I’ve mentioned this before, but we love to grill garlic with our burgers. Just peel the cloves and put them in a foil pouch with olive oil, then grill them on indirect heat. They get incredibly soft and spreadable, and it’s SO good on a burger. I’m going to bake some onion rings and fries to go with everything, and then we’ll have freshly baked chocolate chip cookies & ice cream to make our own ice cream sandwiches.
Thursday: Lime chicken with onions, black beans, & brown rice (seasoned by stirring salsa into it) – just squeeze lime juice and sprinkle a tiny bit of sugar over the chicken so you get some great caramelization.

Saturday: Pasta wheels (J’s favorite pasta shape – he and C both like to eat these plain once they’re cooked, like someone would eat chips) with marinara sauce, green beans with almond slivers, and salad with carrots & cucumbers. This reminds me – does anyone have any good homemade salad dressing recipes? I’d like to try one sometime. That’s one thing we’ve never ventured into making from scratch!
