Menu Plan Monday

I can’t very well continue on to writing about menu planning without first mentioning the news that everyone is talking about right now… I had just started this post when news about Osama bin Laden’s death started to surface. I guess it’s only fitting that in the age of social networking I first heard about it on Facebook, then quickly turned on the news, watching commentary until President Obama made his speech. I still remember waking up almost 10 years ago to a call from my mom telling me about the attacks in New York and DC. It’s a day I’ll never forget, and tonight is another one of those moments.

On to a lighter note…

I’ve lived in Texas all my life so I’m pretty accustomed to its crazy weather, but it was in the 40’s today, and is supposed to be in the 40’s or 50’s tomorrow.  All our long sleeved clothing has long since been packed away, so we’ll be layering tomorrow to stay warm. I have to admit the cold weather is a nice break from 90 degree days, though, and I’m hoping all the rain is helping to extinguish the fires that have been burning all over the state. Is the weather where you are crazy too?

Monday: I had something else planned, but with this cold weather now I’ve decided to do our favorite cold weather standby – soup & paninis.

Tuesday: We have free passes for a local pizza buffet – even cheaper than free kids’ meals at Chick Fil A!

Wednesday: Chicken, homemade mac & cheese, and carrot sticks.

Thursday: Beef stir fry – that’s right, people – I’m shaking things up! I’m going to do red peppers, broccoli, carrots and onions in a spicy Kung Pao sauce, served with rice. I’ll totally be winging it on this recipe, so wish me luck.

Friday: Tacos, requested by Brian. We like having them with black refried beans, and we’ll probably make the Pioneer Woman recipe for salsa to go along with it.

Saturday: My parents are coming to visit so I’m going to make chicken taco soup – a nice easy recipe and something we really love, so it’s always fun to have when company comes. Brian will be in charge of making guacamole to go along with it, and we’ll have leftover salsa too.

      I really like menu planning – it makes things so much easier throughout the week, and I am more ‘on task’ when I grocery shop. Hope you like it too!
