I’m trying several new recipes this week to spice things up a little!
Monday: Leftover Abuelo’s chicken fajita tacos with rice, black beans, & salad
Tuesday: Wanchai Ferry Kung Pao chicken – we didn’t end up having this last week. I’m adding in carrots & zucchini, and the kit comes with peanuts & rice.
Wednesday: Eating out with friends
Thursday: Homemade pizza with whole wheat crust. I’m going to use this recipe for the crust, but plan to use all whole wheat flour. We’re going to have one pizza with turkey pepperoni, and then I’m trying a recipe from my friend Alexis. I’ll include the recipe below, if you want to try it too – it sounds SO good!
Friday: Baked lemon pasta with grilled chicken & green beans.Can you believe I’ve {gasp} never tried one of the Pioneer Woman’s recipes before?
Saturday: Zesty BBQ chicken and sweet potato fries. I’ve made this before for sandwiches. This time I’m going to try shredding it a little less and we’ll have it without bread.
Here’s that pizza recipe I told you I’d post – it sounds like an easy meal to make, which I definitely need some days!
Alexis’ Pizza with Garlic Spinach, Caramelized Onions, and Blue Cheese
The onions & spinach can be made ahead of time. Then the pizza takes about 3 minutes to assemble and 8 to cook and dinner is ready!
Ingredients:
• Pizza crust
• 2 large or 3 medium onions, sliced into rings
• Salt
• Oil
• Sugar
• Fresh spinach
• 4-5 cloves of chopped garlic
• Soy sauce
• Crumbled blue cheese
Directions:
• Onions: Sprinkle with salt. Place in frying pan over medium heat in about 2 TBSP oil & cook until bottoms start to brown, then start stirring. Add about 1-2 tsp sugar. Stir and cook until caramelized. Set aside.
• Spinach: Remove stems. In sautee pan, heat about 2TBSP olive oil. Add 4-5 cloves choppped garlic; when garlic starts to soften, add spinach and toss. Drizzle with a little soy sauce (just a touch), let spinach soften, remove from heat, and set aside.
• Assembly: Make crust per package instructions (I like to roll it out on a little cornmeal). Layer with onions, spinach, and then sprinkle with crumbled blue cheese. Cook about 6-8 minutes (per package instructions) HINT: if you heat the cookie sheet or whatever you are baking the pizza on in the oven while it is preheating, it helps the crust stay crisper!
I LOVE making homemade whole wheat pizza!! We laugh because I use my bread machine for the pizza crust. How could I not? It’s so easy, pop the ingredients in and while doing other things, one hour and thirty min later I have perfect pizza crust. LOL we don’t ever make bread with the bread machine – hmm not sure why? Anyway we bake our pizza on a stone to bring it to perfection. The Mr. says it’s his favorite pizza – even better than take out! I’m all like yahoo! about that. I put garlic in my crust too.
I’m always into trying new things in the kitchen. I need as much help in that area as one can get. Thanks for this posting. It brings new meaning to meal planning, something I am needing to improve at

Rebecca, we have a bread machine too – I’ll be using it to make my crust! We have found a great dinner roll recipe we use it for, too. Our favorite bread machine recipe by far is an Italian bread with seasoning in it. It is soooo good and reminds us of some bread we get at our favorite Italian restaurant. We don’t make bread nearly as often as we did when we first got the machine, though.
I haven’t ever used a pizza stone before – in fact, we got one as a wedding gift seven years ago and I sold it at a garage sale soon after without ever trying it (what was I thinking?!). I keep hearing what a difference they make, though. I’m going to have to keep an eye out for a good deal on one, I think.

I just bought Pillsbury Thin Crust canned pizza dough a couple of days ago. I would much rather have your recipe for whole wheat pizza crust. Oh well, next time!
