Menu Plan Monday – Birthday Week!

Thursday is C’s birthday, and even though he’s just turning one, I want to make food I know he really likes.  We’ve also got company coming over two nights this week, so I’m pulling out some favorite meals/recipes to use. Oh, and can I say – we love those quesadillas we tried last week! It’s so much fun trying new things, especially when they turn out to be wonderful like that.

Monday: We’re having some people from my work over, and are making chicken fajitas. Brian’s going to grill the chicken – our first grilling of this year! We love to grill out and do it a TON during the spring and summer. I’ll also saute some onions and bell peppers, and we’ll have Brian’s homemade guacamole (this stuff is AMAZING. I’ll have to post the recipe sometime soon).

Tuesday: We’ll have leftovers of fajitas if there are any. If not, we’ll do a hodge-podge meal. I’ll make mac & cheese and some veggies to have with it.

Wednesday: My brother (& maybe his girlfriend, too) are coming over, and I’m going to make one of his (and our) favorites. This is not a recipe we make very often at all because it’s not the healthiest of choices, but it is a definite comfort meal for me! It’s called Crunchy Chicken Crescents. Here’s the recipe if you’d like to try it, too:

Ingredients:

• One tub of cream cheese with chives & onions

• 2 cans of white chicken meat

• One tube of Great Value Crescent Roll dough

• One box of stuffing mix

• Butter

Directions:

1. In a bowl, mix the cream cheese, chicken, and 1 tablespoon of softened butter.

2. Separate the crescent roll dough into the eight triangles. Take one triangle and put about 2 tablespoons of the cream cheese mixture in the center. Fold the edges of the dough up and press the seams so it is sealed well. There is no “right” way to do this – just make sure it’s sealed up well and you’re good to go! Fill and seal all of the the crescents (even though they’re not really crescents at this point… we still call them that anyway – just go with me, here).

3. In a small bowl, melt 1 TBSP butter. Pour the contents of the stuffing packet into a separate shallow bowl. Dip each crescent into the butter, and then press it into the stuffing, coating on all sides. Place on a cookie sheet and bake at 375 degrees for 10-12 minutes, or until the crescent roll dough looks golden brown.

It’s such an easy recipe – just be prepared to get your hands a little dirty! Also, sometimes I buy two tubes of crescent roll dough in case I have extra cream cheese mixture left.  We serve these with green beans, salad, and homemade mashed potatoes.

Thursday: C’s birthday!! At this point his favorite things to eat are grilled chicken, black beans, and rice, so it’s a pretty simple meal to make. We’ll have yogurt & fruit (also his favorites) for dessert – we’re saving cake for his party day.

Friday: I don’t know where, but we are eating OUT! We’re having people over to our house the next day for the party and I don’t want to dirty up the kitchen. I don’t know if y’all are like that too, but I always avoid dirtying up the kitchen right before company comes over.

Saturday: We’ll probably do something simple like sub sandwiches for dinner. I like to saute the deli turkey with a little chipotle sauce and onions, and make hot subs. They’re sooo good with the cheese melted over them.

No new recipes this week! I’m always on the lookout for something new to try, so if you have anything you’d recommend I’d love to add it to next week’s meal plan. Have a wonderful week, everyone!
