So, it’s summer, and I really thought that would mean things would feel like they were running at a slower pace. Not the case, my friends! I feel like we’ve been going nonstop lately – all with fun things, so I can’t complain – but I think this is the third week in a row that I’ve started to work on my menu plan and thought, “Man, I’m tired. I want an easy menu this week!” Do you ever have months like that? I was about to say, “Hopefully I’m not the only one!” but then I guess that would mean I’m wishing tiredness upon you, ha. :)
I am trying two new recipes this week! I’m excited to have two meals to try. Both sound really good and really easy (ok, I’m using italics a lot this week… that must be the tired part of me wishing I could lean over, too… and fall asleep).
Monday: We’re trying my friend Amber’s quasi-lasagna. Just click on her name to pop over to her blog and check out how easy it is. You might want to give it a try, too! I got some baby greens and will make a simple salad to go with it.
Tuesday: We’re planning to have leftovers from Monday. No Chick Fil A this week – we were out of town this past weekend (more on that later this week!) so we want to eat all our meals at home this week.
Wednesday: Grilled chicken (Brian will handle this part, and I’ll have him pick whichever seasoning he wants – we always have a lot of options on hand), brown rice, and cooked carrots.
Thursday: Remember all those recipes from Food on the Table I mentioned a while back? Well, I found another one recently while reading their blog and decided I had to give it a try. We’ll be having pecan-crusted chicken tenders. Don’t they sound good? There’s honey and spicy mustard in the recipe too, and it just really sounded like something we’d love. I’m going to make some plain breaded tenders for C to eat, since he’s still so little. We’re having cut green beans to go along with this.
Friday: You guessed it… leftovers! We’re going to have chicken again and I’m going to bake some onion rings to go with it. I mean, it is the weekend, after all!

Sounds like a great week! I love to cook but time is always an issue – I’m always doing menu plans that are simple, but still delicious. If I didn’t menu plan it would be fast food – ick! Stopping by from the link at Menu Plan Monday :-)
