It’s THAT time of year, where holiday things are starting to pop up (and here in Texas it’s finally starting to feel like… well, fall, at least. Most of the time). It’s definitely a busy time of year but I love it! We put up our tree and most of our decorations this weekend – I am in the holiday spirit, for sure! Have you decorated yet?
On to meals for the week:
Monday: Buffalo pizza and green beans
Tuesday: Chick Fil A or Jason’s Deli with friends – free kids’ meals at both places!
Wednesday:
Thursday: We’re babysitting, so we’ll have four kids aged 3 and under at our table. Chicken nuggets, cooked carrots, and french fries it is!
Friday: Holiday party! No food to think about… but I do need to come up with a good White Elephant gift idea.
Saturday: Chicken Taco Soup with guacamole and chips. We may be having friends over for dinner & games, but either way this is a nice easy meal for a Saturday. I love my Crock Pot!

Questions regarding the soup? Do you drain the beans? Do you think putting the chicken breasts in frozen would work, since it cooks so long? Sounds great and expect to make it tomorrow! :-)
Natalie – I do not drain the beans, and I definitely think frozen chicken breasts would work! I’ve used frozen chicken tenderloin before and they’ve worked just fine. It does cook such a long time that I think even larger pieces of chicken would do just fine. Hope you love the soup as much as we do!

This soup was fantastic! I personalized it a little (used frozen chicken, 1 can black beans, 1 can red kidney beans, 1 can corn). It was super easy, but hard to resist as I smelled the goodness while it was cooking all day. I will be making this again! Thanks for the recipe. :-)
I’m so glad you liked it, Natalie! I will have to try adding red kidney beans next time we make it. Brian would love it if I added corn, but that is one veggie I am not good about eating. :)
