How was your weekend? Ours was really good, just busy! Saturday we went to the zoo with some good friends. They have two little girls that our boys love playing with, so it’s always fun when our families get together. Here’s one of our photos from the zoo:
I don’t think it’ll be too long before C catches up to J in height! Speaking of…. his birthday is THIS WEEK! I went out while the boys napped yesterday and bought a few things for the party. I went to Hobby Lobby (which, by the way, is always a blast for me to go to, whether I need to buy anything or not) and found a lot of items for 50% off, including some red & white paper lanterns to hang from the ceiling (we’re doing a Cat in the Hat theme). I will definitely be posting photos of everything after the party.
Since I’ll be working on things for the party several nights this week (yes, I know this is a two-year-old’s party… but I love doing this kind of stuff!) we’re keeping meals pretty simple.
Monday: Lime chicken with black beans and rice. This is one of the meals my brother always requests, and we really like it a lot too. I sautee chicken & onions with lime juice, salt, a little butter and a very slight sprinkling of sugar to help everything caramelize. I put a bed of rice out on a platter, then top it with black beans (seasoned with salt, pepper, and a little fresh squeezed orange juice) and then the chicken and onions on top. The citrus flavors are nice and bright, and this makes great leftovers!
Tuesday: Chick Fil A, of course. Do you even have to look at my Tuesday listing now? :)
Wednesday: Burritos, at Brian’s request – we cook lean ground beef with taco seasoning for ours, but you could do these with grilled chicken too.
Thursday: Burrito leftovers – sometimes I’ll switch things up (’cause I’m wild like that) and use the leftovers to make nachos.
Friday: We’ll grab something out and bring it back to the house, since we’ll be busy decorating the birthday cake!

Ooooo — the lime chicken sounds GOOD. When I was in college, the lime margarita chicken at Chili’s was my FAVORITE. Your dish sounds a lot like it. I think I’m going to add that to my plan next week.
