We traveled this past weekend and have several other extra expenses coming up, so we kept our grocery bill low ($50! Woohoo! And that’s with medicine I had to buy for my insane allergies) this week. And we’re even having company over one night! I’m still planning on trying the fish suggestions Janalyn, Julie, and Susan recommended in the coming weeks and I’ll report back on how my experience goes – it’ll be the first time I’ve had fish in years. Anyway, on to our menu for the week:
Monday: My brother and his girlfriend are coming over for dinner and to watch Chuck. Any other Chuck fans out there? I love it but Brian doesn’t, so I’m happy to have them to enjoy the episode with me. What are we eating, you ask? Well, I never made the buffalo chicken pizza last week, so we’re having that. I’m also making a pepperoni pizza, because when company comes I want to make sure to have a “normal” option too.
Tuesday: Grilled chicken with rice and that amazing carrot recipe I’ve mentioned before. Seriously, people, try this recipe. It’s by far my favorite for carrots – it’s got just a hint of sweetness to it, but cumin and lemon juice cut the brown sugar just right.
Wednesday: Pasta with sauce and lean ground beef. I’m planning to make my own sauce (this recipe that I’ve mentioned before) but I have to admit that just in case I’m feeling lazy I bought a jar of sauce as a backup plan.
Thursday: I’m pretty excited about this one, because it’s NO cooking for me! A local women’s group sells homemade casseroles on Thursdays, and they’re supposed to be really good. It supports a great organization, and I can get one for about $5. I’ll let you know what we think of it next week!
Friday: Quesadillas. Can you tell we like these? We make them a LOT. They’re quick and easy, the boys both love them, and you can sneak things like corn, bell peppers, and other veggies.

• Heather has a BBQ meatball recipe that sounds really good! I like that it takes something you think of as traditionally Italian and gives it a different spin. Plus, I think it would be a fun meal to have with kiddos.
