Hi everyone! Did you have a good Mother’s Day? I had a really nice one – and got to take a two hour nap. Can’t get much better than that! Brian and the boys gave me a Willow Tree figurine. I know this figurine will be even more special as the boys get older, because it will bring back so many memories from when they were younger.
Ok, on to my menu for the week! It involves a couple of grilled items – we LOVE to grill out in the spring and summer!
Monday: Grilled chicken with veggies. We’ll probably use our Kick’n Chicken seasoning – it’s really good! I actually discovered it through a sample at Sam’s… one of the few times I’ve actually bought something I sampled. It’s got a really nice flavor profile to it and has a grinder built right in to the container.
Tuesday: Dinner at Rosa’s with some friends. I usually get their tostadas… and a tortilla. They make their tortillas fresh, and they’re SO good! I’m trying to eat healthier, though, so wish me luck on trying to pass up the tortillas. :)
Wednesday: FISH. Yes, you read that right. I’m getting brave and making tilapia! I’m a little nervous, honestly. Yep, I’m 28 and scared of eating fish. I’m trying Susan’s method of baking the fish in little foil packets with lemon juice and veggies – she suggested baking them for about 20 minutes at 350 degrees. I’m also going to add some minced garlic (I love garlic!) and parsley. I’ll let you know how it goes!
Thursday: My mom’s Chicken Enchilada Casserole recipe – I never got around to making it last week because some friends invited us over for a Cinco de Mayo party complete with fajitas and enchiladas! Anyway, I don’t know if I mentioned it last week but when I make this recipe I add a can of Rotel too, because we like things a little spicy. I also get the reduced fat sour cream and mix a little in because we really like the flavor of that added in.
Friday: Casserole leftovers with salad.
Saturday: Casserole leftovers AGAIN. Yes, I know that’s not very exciting. But it’s great for us because it means a break from cooking for the weekend, and it definitely saves money to be able to stretch a meal out over several days like that. Since we like the casserole so much it doesn’t bother us to have it three nights in a row. I can’t say that about too many recipes!
